[Gristmillers] Blue Corn

I have grown blue corn in the front yard ( about 50 lbs)  and grind for my own use. I find it to be very flavorful. It has a nutty flavor. I think that it is different. It is not as blue or purple as the blue corn chips that I buy in the store. The NM department of agriculture says that it is much higher in lysine ( protein) that other corn.

Woody,   There is a farmer in the Goldsboro NC area that is interested if there is a demand. I will try it for the novelty.  The popcorn grits and meal worked but short shelf life.   I can include you if interested.

Ron, I am grinding some at the mill, it is not very popular here.  I am just south of Franklin, NC.  Currently I only grind about 50# per year.  I would be interested in buying some local blue corn if you have a source in the mtns.

Adding a little CaOH (lime) intensifies the color and improves the flavor.  Purple corn is supposed to have more protein than other corns, but it doesn’t seem to impact the cooking.  Some customers will seek it out for the extra anthocyanins.
